Ham & Egg Salad On Pork Rinds

Less than 2 carbs

After fasting for over 16 hours, I wanted to make something fun to snack on to satiate my appetite. Here’s what I came up with

Ingredients:

2 medium boiled eggs1 tsp diced jalapeno pepper
2 slice Krakus Imported Ham1 tsp diced raw onion
1 tbsp Duke’s Mayonnaise 1 tsp Sriracha hot chili sauce

Preparation:

Dice all ingredients or put everything, except Sriracha sauce, in a food processor. Pulse the mixture a few times to an egg salad consistency.

Serve with zero carb pork rinds. Drizzle a few drops of Sriracha on each bite.

2 Servings:

Serving Size = 3.25 oz
Carbs = 1.9g
Net Carbs = 1.72g
